Who doesn’t love a good Halloween sugar cookie cut out?? Especially one that can be made gluten free and vegan. Cut them into whatever shape your heart desires. While they may look spooky I promise they are quite the treat.

Gluten Free & Vegan Halloween Sugar Cookies

Ingredients

Cookie Ingredients

  • 1/2 C Vegan Butter Cold (not melted)
  • 1 C Sugar
  • 1 Bob's Red Mill Egg Replacement
  • 1 1/2 TSP Vanilla
  • 2 1/4 C Bob's Red Mill 1-1 Gluten Free Baking Flour
  • 1/2 TSP Salt

Icing Ingredients

  • 7 TBSP Chickpea Brine (water drained from a can of chickpeas)
  • 4 C. Powdered Sugar

Instructions

Cookie Directions

  • Preheat oven to 375 F.
  • Mix together cold butter and sugar until combined.
  • Add in egg replacement and vanilla.
  • Slowly mix in flour until completely combined. Dough will start to form a ball.
  • Place ball of dough on parchment paper and using a measured rolling pin roll to 3/8 of an inch.
  • Using cookie cutters, cut dough into desired shapes.
  • Bake cookies for 9-11 minutes or until cookie edges start to brown.

Icing Directions

  • Mix together chickpea bring and powdered sugar. Add powdered sugar slowly to get the desired consistency. Add food coloring if you want a specific color. If the icing is too thin add more powdered sugar. If it is too thick add more chickpea bring.
